- The weight of your knee in the center of fermenting bucket lid will make it much easier to remove the lid locks.

- LME is equal to approx 80% DME, ie., 5lb LME = 4lb DME

- DME Weight Conversion:   1 cup DME = approx 3.4 lb
                                             1/3 cup DME = approx 1.1 lb
                                                   1 lb DME = approx 0.3 cup

- Hydrometer temperature correction:  .001 for every 10°F above or below 60°F

- Alcohol content:  (OG-FG) x 131 = ABV%
        -ABV will increase/decrease by about 0.85% per pound of DME per 5 gal wort
        -ABV will increase/decrease by about 0.70% per pound of LME per 5 gal wort

- Bottling... I fill a sink with sanitizer and fill each bottle, empty, and turn upside down on dishwasher rack. After running through a dishwasher cycle without soap they are ready for fill. By setting the bottling bucket above the dishwasher and using the dishwasher lid/rack to stage bottles it eliminates overfill mess on the floor and provides a mini table. With a helper the bottles can be capped as fast as filled and it goes pretty smoothly.

- Chiller:  Add immersion chiller to brewpot toward end of boil to sanitize.
